You can't do it in a normal way. If a filename contains more dots, only the part after the last dot is called extension that can be associated with an icon. Note that for 7-zip there is NO sense to do that - all but the very first file are just parts of a splitted archive with random content and NO 7-zip header.

Using internal associations, one can assign an icon for any file name pattern, only a search template is required... But it will only be valid within TC. Windows doesn't handle complex extensions with dots, so there is no way to do this in Explorer.
