after pressing F3 it jsut shows up rubbish text in Notepad++
It sounds like you have changed the default action for F3. In the Menu go to "Configuration" -> "Options..." -> "Edit/View" and make sure the first option "Internal Viewer with file under cursor" is selected.

"Quick View" and "Lister" is essentially the same viewer, shared plugins and (mostly) configuration.
I aasumed that you use default configuration. F3 opens Lister by default. If you have MMedia plugin installed properly you should be able to view (respectively hear) MP3 files with it, using Quick View and/or Lister.
So try to open MP3 with Quick View, if it's works, you should see tabs in Quick View window; go to "Options".

You have pressed F4, not F3.

Well actually my F3 shows the file up in Notepad++ ... but what I did was to click Qtrl-Q on the MP3 file which worked and gave me information that the file is here:
C:\Users\root\AppData\Roaming\GHISLER\mmedia.ini
... and I have now all the Options appearing.

The content of the file looks like this:
----------------------
[ext]
MMEXT=mpe,mpg,m1v,mpeg,wma,wmv,avi,aiff,wav,au,snd,aifc,rmi,midi,mid,cda,wvx,wax,asf,asx,vob,ifo,dat
MP3EXT=mp2,mp3,m3u,ogg,pls
[Options]
RememberAP=1
Autosave=1
Autostart=1
infopresencewmp=1
autoclose=0
flxocx=1
fit=1
Repeat=0
buserfont=0
intmp3=1
MICust=
Alternate=3
ActivePage=2

------------------------

What is the next step?

So it's seems that plugin is installed properly. Now you can add extensions for files which does not play with plugin already.
You can add extensions for video files on MMEXT and audio on MP3EXT, separated with commas.
Try Quick View with video files which did not opens before.
