I have just checked, the current beta uses the following search string to find indexed UNC paths:
\\* !\\*\*\*

Does this work for ETP too? If yes, TC should already be using Everything for UNC paths returned by that search.

There's currently no way that Everything returns ETP results, as far as I can tell.
If it gets implemented by the author there should be a way to enforce UNC formated results.
