You have settings for file system plugins above <general> but you can only configure if wfx support other columns.
Samples:
VirtualPanel, Cloud, secure FTP ... do not support custom columns
ADB allows additional column

I don't have plugins installed, not a single plugin works.
I just want to know, where can I set an other project.

Can the options here be set to something else?

Two antagonistic assertions either you do not have installed plugins or the one you istalled to not works....
<General> means normal file system.
If you want you can define a new set of colums for the file system like adding columns in Explorer. But if you do not have content plugin (wdx) installed the interest is somehow limited...
