How to change text size and color of the custom fields below thumbnails?

Is it possible to decrease the text size of the custom fields below thumbnails and change their color?

Also is it possible to increase or decrease the space between thumbnails?

And is there a way too hide all toolbars at once? A full screen mode of sorts?

Yes, via the field: "Show custom fields below thumbnails" - see: https://madsenworld.dk/tcmd/thumbfields.png

You can add prefix and suffix text to a custom field like this:
[="prefix"pluginname.fieldname.unit"suffix"] - for example: [="size "tc.size.bkMG]
